Champagne insert: warm Champagne slightly with sugar, dissolve gelatin. Pour 1cm layer into insert ring. Freeze solid.

Strawberry mousse: warm strawberry puree with sugar, dissolve gelatin. Cool to room temp. Fold in whipped cream.

Assemble: pour strawberry mousse into ring over sponge. Place Champagne insert disc. Cover with remaining mousse. Freeze 6 hours.

Pink Champagne glaze: combine warm Champagne and strawberry puree. Dissolve gelatin. Add pink coloring. Cool to 30°C.

Unmold and glaze.

Decorate with fresh strawberries, gold pearls and edible glitter.
