Strawberry Champagne Entremet

Instructions

    Bake and cool thin almond sponge. Cut to fit ring base.

    Champagne insert: warm Champagne slightly with sugar, dissolve gelatin. Pour 1cm layer into insert ring. Freeze solid.

    Strawberry mousse: warm strawberry puree with sugar, dissolve gelatin. Cool to room temp. Fold in whipped cream.

    Assemble: pour strawberry mousse into ring over sponge. Place Champagne insert disc. Cover with remaining mousse. Freeze 6 hours.

    Pink Champagne glaze: combine warm Champagne and strawberry puree. Dissolve gelatin. Add pink coloring. Cool to 30°C.

    Unmold and glaze.

    Decorate with fresh strawberries, gold pearls and edible glitter.

    Serve within 4 hours of glazing for freshest appearance.

The Champagne insert should be barely sweet — the strawberry mousse is the sweet element. A lightly sweet, tart sparkling insert creates the most sophisticated flavor contrast. Use actual Champagne or good quality Prosecco — cheap sparkling wine creates an odd chemical flavor.
